Crispy Baked Eggplant Chips

Ingredients

  • 1 Eggplant
  • 3 tablespoons Olive Oil
  • Sea Salt + Pepper to taste
  • Paprika to taste Optional
  • Mesquite Smoked Powder to taste optional

Instructions

  • Preheat oven to 275F
  • Wash eggplant
  • Slice into 1/4 inch slices the long way
  • Place eggplant on a baking sheet lined with parchment paper
  • Season with salt and pepper and any other seasonings of choice 
  • Place in oven for about 1 hour or until crisp
