- 1 Eggplant
- 3 tablespoons Olive Oil
- Sea Salt + Pepper to taste
- Paprika to taste Optional
- Mesquite Smoked Powder to taste optional
Preheat oven to 275F
Wash eggplant
Slice into 1/4 inch slices the long way
Place eggplant on a baking sheet lined with parchment paper
Season with salt and pepper and any other seasonings of choice
Place in oven for about 1 hour or until crisp
