Mint and Lavender Mojito with Blueberries

- ½ cup sugar
- ½ cup water
- 2 tablespoons dried lavender flowers
- 1 shot glass of blueberries
- 4-6 leaves mint
- 1 lime
- 1.5 ounces white rum
- 1.5 ounces club soda
- Handful of ice - for every 1 serving you make you should have enough ice for about half the cup you are going to pour into.
Simple Syrup
Add equal parts water and sugar to a medium pot. We added 2 tablespoons of lavender flowers (optional), you can use any flavoring you want.
Bring to a boil.
Stir with a wooden spoon until sugar is dissolved.
Turn off the stove and let it cool completely to room temp. If you are in a rush put it in a pyrex and pop it in the freezer for 20 minutes.
Strain out any additives using a sieve or tea strainer
Store for up to 30 days in fridge.
Mojito
Put the blueberries into the bottom of a sturdy highball glass and puree them until you basically have a thick blueberry juice.
Add mint to glass and muddle
Add 1.5 oz white rum
Add .5 oz part simple syrup
Add .5 oz part lime juice
Add 1.5 oz club soda
Add ice
Stir and enjoy
