Mint and Lavender Mojito with Blueberries

Ingredients

  • ½ cup sugar
  • ½ cup water
  • 2 tablespoons dried lavender flowers
  • 1 shot glass of blueberries
  • 4-6 leaves mint
  • 1 lime
  • 1.5 ounces white rum
  • 1.5 ounces club soda
  • Handful of ice - for every 1 serving you make you should have enough ice for about half the cup you are going to pour into.

Instructions

Simple Syrup

  • Add equal parts water and sugar to a medium pot. We added 2 tablespoons of lavender flowers (optional), you can use any flavoring you want.
  • Bring to a boil.
  • Stir with a wooden spoon until sugar is dissolved.
  • Turn off the stove and let it cool completely to room temp. If you are in a rush put it in a pyrex and pop it in the freezer for 20 minutes.
  • Strain out any additives using a sieve or tea strainer
  • Store for up to 30 days in fridge.

Mojito

  • Put the blueberries into the bottom of a sturdy highball glass and puree them until you basically have a thick blueberry juice.
  • Add mint to glass and muddle
  • Add 1.5 oz  white rum
  • Add .5 oz part simple syrup
  • Add .5 oz part lime juice
  • Add 1.5 oz club soda
  • Add ice
  • Stir and enjoy
